Bouquet: Lifted mulberry and blackberry with French oak undertones.

Palate: This wine illustrates exactly how I have been handcrafting premium red wine for my entire life, in the vineyard. The terror and microclimate of this block ensures it produces year after year fruit which is generous and juicy with the obvious characters of this vintage being mulberry and black-berry whilst there are more refined touches of fine acid and oak coming through from the 12 months in small oak the wine has had. The time in barrel and use of different aged oak allowed this flavour to infiltrate the wine without over powering it and to run seamlessly into the natural tannin structure of the wine creating a well rounded wine with an elegant finish.

Cellaring Potential: Although I am drinking this wine now and it is drinking very well I will keep some boxes in the cellar for many years to come.

Winemaking Details: The grapes used for this wine were sourced from one of my favourite vineyard blocks which I have hand crafted wines off in the past and I was given access to this vintage. Picking started when I felt the colour and Baume levels were at an optimum then the grapes were gently crushed and fermented in my small capacity open top fermenters for 7 days with hand plunging twice daily. The wine was then pressed and drained off into old French and American barriques for 12 months prior to bottling. This wine encapsulates Coonawarra Cabernet Sauvignon the way it should be, an honest reflection of the vineyard where it was grown.
