Winemakers Notes
-
Colour: Deep dark black/purple with red hues.
-
Bouquet: Aromatic nose with plum, black fruits and lovely spice. Notes of Christmas cake, dark chocolate and violets.
-
Palate: Uncompromising Shiraz that is both elegant and powerful at the same time. There is exceptional structure, that delivers blackberry, raspberry and hints of pepper, finishing with impeccably polished tannins which balance the natural fruit acid to ensure the longevity of this exceptional wine from another great Barossa vintage.
-
Cellaring Potential: Drank well yesterday and today when allowed to breathe and will continue to do so for many years to come.
-
Winemaking Details: The Shiraz grapes were individually picked out in the vineyard for their exceptional quality and picked separately to the rest of the vineyard. The grapes are then picked and delivered to the winery and gently worked through the de-stemmer before being transferred to an open fermenter. The juice is pumped over twice a day for seven days to extract, homogenize and regulate temperature before draining and being basket pressed. The skins are then gently pressed for approximately 20 hours to retrieve more of the essence of the grape. After the wine has completed its malolactic ferment, it is matured in new and seasoned French and American oak barrels prior to bottling.

Serving Suggestions: A wine fit for a king and queen which is fitting as it has been served to royalty – only the finest scotch fillet steak will do.
